Dried Fruit Curry

Ingredients
- 1 onion chopped
- 3 tomatoes chopped
- 2 garlic cloves peeled
- 1 inch root ginger peeled
- 2 tsp cumin seeds
- 1 tsp pine nuts
- 4 tbsp oil
- 1 tsp ground turmeric
- 1 tsp chilli powder
- 1 tsp garam masala
- salt to taste
- 300 ml water
- 125 g dried dates stoned, washed and chopped
- 15 unsalted cashew nuts
- 120 g raisins
- 1 tbsp lemon juice
- 2 tbsp fresh coriander chopped
Instructions
- Chop and mix the onion, tomatoes, garlic, ginger and cumin.
- Heat the oil in a pan and add the onion mix. Cook for 2-3 mins.
- Add the turmeric, chilli powder, garam masala, salt and water.
- Add the dates, cashew nuts, pine nuts, raisins and lemon juice. Simmer until the gravy is smooth and the nuts are soft.
- Serve garnished with the corriander.
Notes
Serve with rice or chapattis.
