Dried Fruit Curry

Ingredients

  • 1 onion chopped
  • 3 tomatoes chopped
  • 2 garlic cloves peeled
  • 1 inch root ginger peeled
  • 2 tsp cumin seeds
  • 1 tsp pine nuts
  • 4 tbsp oil
  • 1 tsp ground turmeric
  • 1 tsp chilli powder
  • 1 tsp garam masala
  • salt to taste
  • 300 ml water
  • 125 g dried dates stoned, washed and chopped
  • 15 unsalted cashew nuts
  • 120 g raisins
  • 1 tbsp lemon juice
  • 2 tbsp fresh coriander chopped

Instructions

  • Chop and mix the onion, tomatoes, garlic, ginger and cumin.
  • Heat the oil in a pan and add the onion mix. Cook for 2-3 mins.
  • Add the turmeric, chilli powder, garam masala, salt and water.
  • Add the dates, cashew nuts, pine nuts, raisins and lemon juice. Simmer until the gravy is smooth and the nuts are soft.
  • Serve garnished with the corriander.

Notes

Serve with rice or chapattis.
