Mixed Vegetable and Lentil Curry

Ingredients
- 250 g red lentils
- 4 tbsp oil
- 1 onion large, sliced
- 2 carrots large, sliced
- 1 tsp turmeric
- 1 tsp cumin seeds
- 1 tsp chilli powder
- 1 tsp ground coriander
- 2 cloves garlic crushed
- 250 g cauliflower florets
- 250 g courgettes sliced
- 175 g tiny button mushrooms
- 4 tomatoes skinned and quartered
- salt to taste
Instructions
- Place the lentils and 750ml of water in a pan. Bring to the boil, then cover and simmer for 15 minutes.
- Heat the oil in a large pan, add the onion and carrots and sauté for 5 minutes. Add all the spices and garlic and cook fokr 2 minutes, stirring constantly.
- Add the cauliflower, courgettes, mushrooms and lentils, cover and simmer for 10 minutes.
- Stir in the tomatoes, season with salt, cover and simmer for 5-10 minutes, until the vegetables are just tender.
