Mixed Vegetable and Lentil Curry

Ingredients

  • 250 g red lentils
  • 4 tbsp oil
  • 1 onion large, sliced
  • 2 carrots large, sliced
  • 1 tsp turmeric
  • 1 tsp cumin seeds
  • 1 tsp chilli powder
  • 1 tsp ground coriander
  • 2 cloves garlic crushed
  • 250 g cauliflower florets
  • 250 g courgettes sliced
  • 175 g tiny button mushrooms
  • 4 tomatoes skinned and quartered
  • salt to taste

Instructions

  • Place the lentils and 750ml of water in a pan. Bring to the boil, then cover and simmer for 15 minutes.
  • Heat the oil in a large pan, add the onion and carrots and sauté for 5 minutes. Add all the spices and garlic and cook fokr 2 minutes, stirring constantly.
  • Add the cauliflower, courgettes, mushrooms and lentils, cover and simmer for 10 minutes.
  • Stir in the tomatoes, season with salt, cover and simmer for 5-10 minutes, until the vegetables are just tender.
